Ingredients for Stir-Fried Pork:
Pork belly 200g


Red chili pepper 30g


Green chili pepper 50g


Ginger 10g


Spring onion 10g


Garlic 10g


Dark soy sauce 3g


Light soy sauce 5g


Sichuan peppercorns 2g


Chicken powder to taste


Cooking wine 5g



Steps for Stir-Fried Pork:


1. Clean and slice the pork belly into thin pieces.


2. Slice the red and green chili peppers, and slice the ginger, spring onion, and garlic.


3. Clean and dry the pan, add an appropriate amount of oil, and stir-fry the pork belly with cooking wine over high heat.


4. Stir-fry the pork belly until slightly charred, then add ginger, spring onion, garlic, Sichuan peppercorns, and dark soy sauce, and quickly mix well.


5. Once the pork belly is evenly coated with the sauce, add the chili peppers and season with salt, continue to stir-fry over high heat.


6. When the chili peppers are about 80% cooked, drizzle in light soy sauce, thicken with cornstarch slurry, season with chicken powder, and mix well. The dish is ready to be served.
