Ingredients for Stir-Fried Eggs with Cucumber and Wood Ear Mushrooms:
– Half a cucumber


– A small half carrot


– 10g dried wood ear mushrooms


– 2 eggs


– 10g water


– Salt to taste


– Cooking oil to taste



Method:


1. Soak the dried wood ear mushrooms in advance;


2. Wash the cucumber and slice it thinly;


3. Slice the carrot thinly, and beat the eggs in a bowl for later use;


4. To achieve a tender scrambled egg, add about 10g of water to the egg mixture and beat well;


5. Heat the pan, add cooking oil, and pour in the egg mixture;


6. Stir fry briefly until the egg mixture sets;


7. Add more cooking oil to the pan and stir fry the carrot slices;


8. Then add the soaked and cleaned wood ear mushrooms, and stir fry. Note that wood ear mushrooms will make a ‘crackling’ sound when heated in the pan;


9. Once the wood ear mushrooms are cooked, add the cucumber slices and egg pieces, season with salt, and stir fry briefly before serving;


10. A plate of well-seasoned home-cooked stir-fry is ready to be served.
