Ingredients for Spinach and Carrot Stir-Fry with Glass Noodles:
Spinach – 1 bunch


Dried Glass Noodles – 1 bunch


Cooking Oil – 3 tablespoons


Garlic – 2 cloves


Chili Powder – 1 tablespoon


Sichuan Peppercorns – 10


Light Soy Sauce – 1 tablespoon


Fragrant Vinegar – 1 tablespoon


Salt, White Sugar – to taste


Toasted White Sesame Seeds – a pinch



Method:


1. Wash the spinach and carrots.


2. Clean the spinach thoroughly and cut into three sections, wash the carrots and grate them.


3. Add water to a pot, rinse the dried glass noodles under running water, then place them in the pot with cold water. Turn on the heat, and once the water boils, immediately turn off the heat. Let the noodles soak in the boiling water for 1-2 minutes.


4. Remove the noodles, rinse them under cold water, then drain and set aside. If the noodles are too long, you can cut them for easier consumption.


5. Add a few drops of oil and a pinch of salt to the pot used to boil the noodles, bring to a boil, then add the carrot shreds and cook for 1 minute. Remove and drain after rinsing under cold water.


6. Blanch the spinach sections in the pot for 1 minute. Once the spinach turns a darker green, remove it immediately and immerse in cold or ice water to maintain its vibrant color.


7. Squeeze out the water from the spinach, place it in a large bowl, and add the carrot shreds and noodles.


8. Add minced garlic and chili powder.


9. Heat a wok, add 3 tablespoons of cooking oil until it’s 50% hot, then turn off the heat. Add the Sichuan peppercorns to infuse the oil with flavor, then remove the peppercorns, leaving the flavored oil. Adding the peppercorns after turning off the heat allows the oil’s residual heat to release the aroma without burning the peppercorns.


10. Pour the hot peppercorn oil over the minced garlic to release the flavors of the garlic and chili powder. Then, add salt, light soy sauce, fragrant vinegar, and a small amount of white sugar, mixing well.


11. Serve in a dish, sprinkle with toasted white sesame seeds for garnish, and enjoy. This dish can be a side or a main course, and it’s low in calories, so those watching their weight can indulge without worry.
