Ingredients for Spicy Garlic and Sour Bean Chicken Offal: A handful of sour beans, chicken offal including chicken skin, chicken fat, and chicken meat, coarse chili powder, several cloves of garlic, cooking wine, light soy sauce, oyster sauce, salt (optional), oil of your choice.
Method for Spicy Garlic and Sour Bean Chicken Offal:


Step 1: Heat the pan over medium heat and add some oil. Cut and prepare fresh chicken hearts, livers, gizzards, and deboned meat.


Step 2: Stir-fry briefly and add minced garlic and coarse chili powder to enhance the aroma and remove any unwanted flavors from the meat.


Step 3: Once the garlic and chili fragrance is released, add chicken kidneys and season with light soy sauce, cooking wine, and oyster sauce to cool the pan and establish a basic savory taste for the meat.


Step 4: Mix well and increase the heat. Add sour beans according to the amount of meat and personal preference.


Step 5: Stir-fry over medium-high heat until fragrant. Remove the pan from the heat and taste a small portion, being careful of the heat.
