Ingredients for Pickled Spicy Bamboo Shoots: Fresh bamboo shoots 500g, a small bag of pickled chili peppers, 60g of rock sugar, 5 dried red chili peppers, half a bottle of white vinegar, 1 tablespoon of salt.
Method: Step 1: Peel the fresh bamboo shoots, clean them thoroughly, blanch them, and then soak them in cold water overnight, changing the water several times to remove the astringent taste. (I prepare a large amount of these when bamboo shoots are in season and store them in the freezer after processing!)


Step 2: Drain the soaked bamboo shoots and squeeze out the excess water for later use.


Step 3: Prepare a small bag of pickled chili peppers. (Available at supermarkets!)


Step 4: Prepare a clean, oil-free, and water-free container, and place the drained fresh bamboo shoots inside.


Step 5: Add a small bag of pickled chili peppers, 60g of rock sugar, and 5 dried red chili peppers. (Pour in the chili pepper water as well!)


Step 6: Add one tablespoon of salt.


Step 7: Add half a bottle of white vinegar. (Not too much vinegar is needed, just enough to cover the bamboo shoots.)


Step 8: Seal the container and marinate for 24 hours until the rock sugar is completely dissolved, then it’s ready to eat.


Step 9: Store the prepared pickled spicy bamboo shoots in the refrigerator.


Step 10: When serving, use clean, oil-free, and water-free chopsticks to take out a small amount. (After the sour bamboo shoots are finished, you can continue to marinate the processed bamboo shoots!)

Cooking Tips for Pickled Spicy Bamboo Shoots: Bamboo shoots must be squeezed dry and placed in an oil-free and water-free container! If you do not prefer to marinate with white vinegar, you can also use cool boiled water or mineral water instead, and it will be ready to eat after marinating for half a month!
