Ingredients for Beer Duck:
– Beer: 1 bottle


– Duck meat: 3 jin (approx. 1.5 kg)


– Fried bean curd sticks: half jin (approx. 250g)


– Ginger, spring onions, garlic: appropriate amount


– Light soy sauce: 1 tablespoon


– Dark soy sauce: a little


– Cooking wine: a little


– Oyster sauce: 1 tablespoon


– Star anise: a little


– Bay leaves: a little


– Cinnamon: a little



Steps for making Beer Duck:


1. Chop the duck meat into pieces, add cooking wine and ginger slices to blanch and remove the gamey flavor.


2. Prepare 1 bottle of beer and fried bean curd sticks (the sauce is excellent for mixing with rice or noodles).


3. Heat a pan with cold oil, pour in the blanched duck meat, and stir-fry over medium heat until the surface is slightly charred (this extracts the duck fat for a richer flavor).


4. Add ginger, spring onions, garlic, light soy sauce, dark soy sauce, oyster sauce, star anise, bay leaves, and cinnamon, continue to stir-fry evenly to glaze the duck meat.


5. Pour in beer to cover the duck meat, bring to a boil over high heat, then simmer over medium-low heat for 30 minutes, stirring occasionally to prevent sticking.


6. Open the lid, add fried bean curd sticks, turn up the heat to thicken the sauce, and sprinkle with cilantro when the sauce is thick (fried bean curd sticks only need a few minutes of cooking).
